Paleo Cooking Class – Zucchini Lasagna

Hi there – Amy here lets talk how to make Healthy Taste great.  For all of those who attended the Paleo cooking class, here is the recipe as promised.  If you missed the class, we will be hosting another class in April and June.

Paleo Energy Balls:


1/2 c almond butter                                             1/2 c  Bob Mill’s flax seed

1/3 c raw honey                                                   1 tsp organic vanilla

1/3 c chia seed                                                     3 Tbsp Enjoy Life Chocolate chips

1 c walnuts

Mix almond butter, honey & vanilla in food processor (use can also use a mixing bowl & spatula if you don’t have a food processor).  Add chia seeds & flax & pulse until completely blended.  Slowly add your walnuts to desired texture & finally add your Enjoy Life Chocolate Chips.  Let set in refrigerator for 15 -20 minutes.  Use an ice cream scoop to create shape & place on a cookie sheet lined with wax paper.  Freeze approximately 30 minutes.  Keep refrigerated!

Almond butter & nuts can be substituted to whatever you love the most.  Toasted coconut also taste amazing in this recipe!!
